Today was an uber-crazy day! We kicked it off with breakfast, cooked by hubby. I know, he's wonderful! :) Then we hit the books. Well, not literally, though I am sure there were moments when Natalie wanted to chuck her Latin right out the door. Ha!
We spent the morning learning lots of things. Levi is learning about congruent shapes, which makes him very happy because he gets to play with the geo-board and rubber bands! When you are a five year old boy, apparently any day that includes playing with rubber bands is a good day. Natalie worked on tessellations, and then spent some time learning to figure tax. She also practiced her contractions, worked on some new Latin vocabulary, finished reading Misty of Chincoteague and made a cute little horse, and completed a project to go along with the story of the death of Saul and Jonathan, which is her Bible lesson this week.
After we finished school, I had lots of other things on my to-do list. Here are some pictures to show you what else we got accomplished today!
First, Levi and I completely cleaned out his room. I quickly confirmed my suspicion that he has too much stuff. We cleaned and sorted and purged...boy did it feel good! We put LOTS in the sell/donate pile, and organized the rest.
Then it was on to the kitchen for some food prep. We have eliminated most of the carbohydrates in our diet..No it wasn't easy, but yes it was worth it. I have fallen into a new 'normal', and we are really enjoying our new way of eating. I wanted to mix up some 'cereal' for the rest of the week, so I started with that. There are NO cereals or granolas on the market that are not FULL of carbohydrates, so I did what any adventurous cook would do. I found a recipe for a dessert topping, and tweaked it to create our very own breakfast cereal. We LOVE it! It is delicious, and is great as a cold cereal, a hot cereal, sprinkled in granola, and even sprinkled on low carb vanilla ice cream! Yumm! Here is a peek....
While I was in the kitchen, I decided to try my hand at a new dessert I had been transforming in my mind. I had seen a photo on Pinterest of apple pies made in the apple. Yummy, but I knew I could make it into a HEALTHY dessert! I tweaked the instructions, and created these delicious apple crisps baked inside the apple. No added carbs (just the natural carbs in the apples!), no sugar! Just baked deliciousness! Take a look...
Yesterday I spent the afternoon finishing up Natalie's valentines. Again, an idea I had seen online, so they aren't original to me, but I think they turned out super cute! What do you think?

wow! that all looks SO good! and, i might need some homeschooling from you...your kiddos might know more than me! :)
I came to read here cause I've been missing you. I don't think I've seen you since that time before Christmas when it had waay to long since I had seen you. Looks like you've been up to some good stuff!
